Surprise!

I am so excited right now. I have something to tell you that will rock your world. Well, actually, it won’t rock your world at all…but it has rocked mine. I am giddy like a school girl and I can’t wait to spill the beans – so here it goes!

I am moving. Well, not me, but my blog. I have made the move to WordPress!! On the count of three, let me hear you...1, 2, 3 {hooray!!}

Friends, this was not an easy move for this less-than-tech-savvy-chic, so please don’t be too disappointed when you click over. The site is as simple as they come. There will be improvements made...you know, just as soon as I figure it all out or break down and pay someone else to do it for me. In the meantime, please extend some grace knowing that it is a work in progress!

No Excuses

Have you ever thought about serving outside your home? Regularly? 

“She extends her hand to the poor, yes, she reaches out her hands to the needy” (31:20).

This Proverbs 31 woman is amazing {duh} and today we see a new side of her. Previously, we have been watching her work with her hands and serving her family. Now we see her serving others.

One might say that this is common sense. The Bible is rich with commands to serve others. True. But put yourself in a mother’s shoes. Walk with her weary legs as she provides a home for her family – and all that entails! And then, on top of washing dishes, clothes, and windows, imagine heading out to deliver food to those who are sick. On top of making meals and washing clothes, imagine finding time to visit a shut-in. On top of cleaning toilets and making beds, imagine serving at a local food bank. On top of wiping tears, noses, and tushies, imagine being a volunteer at the hospital. On top of giving hugs and saying prayers, imagine helping the homeless. Yes, on top of all that, imagine finding time to serve others.

Sometimes I wonder how I made it through a day of cooking, cleaning, and laundry. Time flies when you are having fun! I could very easily tell you that I am just too busy to serve others. I could assume that other people will take care of the needs. I could say that I have nothing to offer. But that would just be another excuse to disobey God’s word.

Sometimes his commands and the examples he gives us in the Bible do not fit neatly into a box. Sometimes we just have to step out in faith and rely on God to give us strength, courage, and time. Covered in prayer, the needs you can address will become evident. Even on top of all you do as a wife and mother, allow God to the opportunity to work through you in the lives of those living outside your home. Certainly he will provide the way once your eyes are open and your heart is willing.

His Creation

As mentioned in this post, my church is beginning to study the Bible in chronological order. {Back to Genesis I go!} This past Sunday we talked about creation, the fall, and the flood. As I read and pondered the Scriptures, I honed in on creation.

I love how God starts his precious words to us. It doesn’t start with who he is or why he is doing what he is doing. It doesn’t even tell us how he created – the process. It just tells us that he created. He created day and night, land and sea, sun and moon, animals, plants, trees…and you.

God created you.

Please think about the impact these three little words have. How does knowing this make you feel?

The same God who created the thousands of stars twinkling in the sky at night also created you. It just so happens that he is the one who thought of fluffy white clouds. He determined the brilliance of the sunset sky. It is God who created the vast oceans and the massive mountains. He alone created the Grand Canyon and the solar system. He produced the trees and flowers with color in abundance. The birds in the air. The creatures on the ground. His. His thought. His creation. It is all his and part of his plan. And so are you.

Soak that in. You were created by God. Knit together. A life planned perfectly. No mistakes. No flaws. You are who you are because God created you that way. Those freckles. God’s design. That limp. God’s design. Your body. God’s design. You are indeed “fearfully and wonderfully made” (Psalm 139:14) by a God who took great care in your design. He breathed life into your body. And he said, “It is good.”

“I chose you before I formed you in the womb, I set you apart before you were born.”
~ Jeremiah 1:5

Now how do you feel? What resonates deep in your heart knowing that God took such great care in you? Are you in awe? Do you wonder why you are so special? Do you wonder what the process was like for God?

Sometimes I think about this. I wonder why he gave me gray hair when blonde would have been prettier. Why I am short and stocky instead of tall and slender. I wonder why I can write but I can’t take a test. Why I can could do a cartwheel but I can't dribble a ball. Why I love asparagus and hate Brussels sprouts. I wonder why my heart breaks at some things and not others. I wonder…

And as I wonder, I get a glimpse of my God. The God who created the incredible heavens and beautiful earth. The same God who created the most beautiful sunset I have ever seen, the deepest blue ocean, the highest mountain, the blazing sun, and the soft moon. This God who populated the earth with living creatures, bountiful crops, striking flowers…he also created me. I am his best creation.

Can you soak that in?

A Few Chapters of You - A Book of Him

I was so excited to be in the New Testament for the B90 challenge and then it hit me. I am participating in a church wide study called The Story. If you haven’t heard of this, it is the Bible written like a novel {sort of…but not really}. We began our journey together on Sunday so guess what that means? I’m back in the Old Testament.

*sigh*

But really, all is well in my world (in case you were wondering), because I am simultaneously in the NT with the B90 challenge – for a few more weeks anyway. God has a lot to teach this girl and I am ready to soak it all in! And, let’s face it, I gravitate towards the NT so doing some real study in the OT will be good for me.

But I digress...let's get down to business!

Last week was a busy week for me in the gospels. You know, I’ve read them and read them and read them. I’ve listened to sermons on them. I’ve done Bible studies on them. Don't take that the wrong way. It's just my way of telling you that I have studied the gospels. I’m by no means an expert – that would require intellect, of which I am lacking. I suppose I'm just trying to say that this was an easy read for me because it was familiar. I'm in my box. My comfort zone.

I love to read about the life of Jesus. The life he lived for me. The life he gave for me.

Something hit me as I was reading these faith-filled, lesson-packed gospels. Did you realize that no matter what gospel you read, the life of Jesus is summed up in just a few chapters? He didn’t spend half a book bragging on himself, although he could have. He just gave us the facts. He told us the things we need to know. He let us in on the secrets of living the life he desires for us. And then commissioned us. He told us to live like he did, making disciples in the world.

Live like he did. Make disciples. Sum up your life in a few short chapters and make the rest of the book about others. I like it.

Top 10 Reasons I'm Not the CM Director

I may or may not have said something stupid last week – to my boss of all people. I'm not sure why I am surprised because I am notorious for saying stupid things when I open my mouth. It’s that whole, “think before you speak” thing that gets me in trouble. Writing is so much easier...and editable!

Someday I will learn. {hopefully}

We were in our monthly meeting when I was giving kudos to Cathy, the children’s ministry director at our church. She, as always, did a bang-up job at putting together an egg hunt that drew an estimated 350 kids. Kids. Add family on top of that and there were a whole lot of people wandering around, looking for eggs, hoping for a prize, playing games, munching on candy, mingling, and having a great time. She deserved kudos and lots of it!

Here’s where I insert foot into mouth. As I was congratulating her, I may have said something like, “I could never do her job.” The statement is true, but probably one that should have remained in my head at the time. All I meant was that I am more of a simple girl. A wall-flower. I am the person who prefers smaller groups...much smaller. Thinking about organizing such an event makes me break out in hives and begin to hyperventilate.

Someone please hand me a paper bag.

I can teach as many people who want to listen. I can sing and dance and make myself look silly for as many people who want a good laugh {that's easy}. But please, I beg of you, do not ask me to plan, organize, and run events that make this introvert be sociable. So today, in honor of my extrovert friend, I am posting the Top 10 Reasons I'm Not the CM Director.

In addition to the egg hunt, the trick-or-trunk event, the bowling party, and the Christmas party (to name a few), Cathy also hosts an overnight extravaganza for the kids - and she actually looks forward to it! I usually go home to sleep in my own, comfy bed.

I wouldn't put on a bathrobe, tie it with my hubby's belt, and suddenly believe I was a black belt. She likes to get into character. I'm more mellow on stage.

She’ll be seen on stage with a rabbit, aka, her sidekick, Mrs. P...and make it all look normal! I couldn't pull that off.

Yes, she will do anything for the kids, including being clawed by a cat. I don't really like cats.

People are just drawn to her. She is enthusiastic and passionate about the ministry. She loves what she does, she loves the kids, and she loves to pour into the people who help her make it all happen. Okay, so we have a little something in common. I just might not be as outwardly enthusiastic!

I couldn’t hold a candle to Cathy…but I am eternally grateful for her and her leadership. She has been a friend, mentor, and encourager for many years and I look forward to serving alongside her for many more to come!

He Loves Us!

Monday nights have become my favorite night of the week. I’m pretty sure I have mentioned that before. There is something incredible that happens when you connect with other couples and come together to explore God’s desire for marriage.

Love is once again in the air and this week we will tackle it from a slightly different angle. We will look at the love that God has for us and how that relates to our marriage…and it does relate! God delights in each one of us – always. Even when we are, um, let’s say, less-than-delightful. I think I may have been the wicked witch of the Kohlhofer West a time or two…or more.

Let’s not ask my husband his opinion on this one, okay?

But knowing that God delights in me even still actually gives me hope. He loves me…and I honor him by reconciling my relationships with apologies, forgiveness, and love.

“So when you fail to love or respect completely, or maybe not at all, take heart. This isn’t about us, but about Him. Mark it down: He loves us because He loves us because he loves us! We have nothing to do with it. Even when ‘we are faithless, He remains faithful, for He cannot deny Himself’
(2 Timothy 2:13).”

It's going to be a great week!

Here is a Love Dare Challenge Update:

Last week I set out some Riesen candies and post-it notes. Each couple had to take one of each and then each spouse then had to choose one. Whoever chose the Riesen candies had to write love notes to attach to each piece of candy and give them to their spouse. Whoever chose the post-it’s had to write love notes and leave them in unexpected places for their spouse. Sharin’ that love!

Mike chose the post-it’s because he had a sneakin’ suspicion that he would be receiving the candy if he let me have them first. In fact, I think that is exactly what all the guys did in our group! Here is my bowl of candy notes.

He left me a few notes around the house, but this one, left on my computer, was my favorite.

I can’t wait to hear how the other couples met the challenge! This week, everyone is choosing a piece of paper with a different challenge for everyone.

April Date Nights:

Zoo Date: With or without kids, the zoo is just fun!

Fondue Date Night: This night can be for couples only or made into a fun night for the whole family! Don’t have a fondue pot? Just use a mini crockpot! You might have to borrow from friends if you want more than one type of fondue but it will be worth it.

Oil/Broth Fondue - Dipping foods: meatballs, prepare cubed meats, shrimp, scallops, vegetables, potato chunks, mozzarella sticks, (cocktail, horseradish and teriyaki sauces for dipping).

Cheese Fondue - Dipping foods: cubed French/Italian bread, florets of broccoli and cauliflower, bite-sized cooked chicken, bite-size cooked ham, roasted potatoes,

Chocolate Fondue - Dipping foods: strawberries, bananas, peaches, pineapple, mango, apples, cherries, angel food cake, pound cake, cheesecake, cookies, marshmallows, pretzels {for chocolate fondue, melt chocolate chips with some vegetable oil (1-2 tablespoons) to get to a good consistency}

The Envelope Date: In advance, prepare 12 envelopes together. Three will have breakfast ideas. Three will have an event idea. Three will have dinner ideas. Three will have lovin’ ideas (or, family fun ideas if you want to make this a family day). Each spouse will fill one envelope and together, you will fill the third with an idea for each category. Here are some ideas:

• Breakfast: Breakfast in bed, your favorite breakfast restaurant, make breakfast together

• Event: Movie, Mini-golf, Park

• Dinner: Chinese take-out, your favorite dinner restaurant, a new restaurant you have been wanting to try

• Lovin’: Romantic movie at home with sparkling cider and fancy/favorite dessert, cuddling with candles or fireplace (and maybe a movie)

• Family Fun: Movie night and popcorn, family board games

I'm so glad that you are here! Sit, sit...let me get you a cup of coffee. Oh wait, I don't have a coffee maker. How about a cold, refreshing Pepsi? 

I'm Deanna, the aspiring writer of SpotLight316, and I am honored that you clicked your way to my place. I am a lover of life. Don't go off the deep end though. I sure didn't! You see, I am a pretty simple girl who truly has the desire to live a pretty simple life. I'm not extreme. I make my own laundry detergent and dishwasher soap, but that's as far as I go. And I don't even do that well. You can sometimes find me at the dollar store picking up a bottle of detergent because I was too lazy to make a new batch and tired of seeing the laundry pile up! I love to cook, but everything is simple. If I can't pronounce an ingredient, it doesn't get put in the recipe. I don't enjoy decorating. I wish I could sew. I don't have a crafty bone in my body. In fact, this is as close to crafty as I have ever gotten! I don't like crowds. I don't like the spotlight. And I don't pretend to know all the answers. In fact, I often find myself without words. I struggle just like you do. I have questions and fears and doubts and worries. But beyond all of that, I desire to live life. To trust God fully - which is a hard thing to do sometimes.

As you peruse the pages of SpotLight316, you will find a whole lotta real life. You will join me in the kitchen, in the preschool, in the ministry, and in the faith. I invite you to open the books I open. To grow in your marriage. To count your blessings. To reach your goals. To seek God. And to journey with me on the crazy road of life. You will see my best and you will probably see my worst. But you will always see me. A real person sitting behind a computer pecking away at the keys, trying to find just the right words to describe the moment. Thankful Thursday!


Today I am thankful. Not because it is Thursday, but because there are so many reasons to be full of joy.

I am thankful for Monday nights. While most people don’t like Monday, I do. I get to make yummy desserts and wait in anticipation of my small group to arrive. The kids fill the house with laughter and the adults…well we get a good ab workout too!

I get the privilege of meeting with four ladies on two separate nights to study James. I love meeting with them more than I can tell you. I love their friendship. I love being challenged by them. I love their encouragement. I love their honesty. Last night I met with my Saturday morning girls for dinner. Time flew by as we laughed and shared together. These are the moments I cherish with friends.

This morning I am walking in a little bit of pain. I amped up my workouts to meet a May goal and all I can say is {ouch!}. But the pain is good because that tells me I worked hard and have a shot at reaching my goal.

I know I say this with every thankful post, but I am so incredibly thankful for this guy. He makes me laugh – especially when I want to cry.


I am thankful for the B90 Challenge. I am learning so much and have accumulated a list of questions that will keep me busy for the rest of the year as I dig into the Bible deeper to find the answers – or just understand things {Isaiah, Lamentations, Ezekiel…}! Boy have I been stretched!

I am thankful it is baseball season!! Even though I have only been able to see two games so far, I am excited for Ryan as he plays his last year in high school. Although he has had a rough start to the season, on the field is where he is happiest!

I am thankful for sunshine! Nice weather is important to frazzled mommy’s who have active little boys! It’s been a little chilly, but Gavin and I have still had the chance to get outside, run off some energy, and soak up some rays.

Happy Dance!

I am doing a happy dance. Go ahead, ask me why!

{Why D?}

I’m so glad you asked! I am doing a happy dance because I have officially finished reading the Old Testament! It was not easy - I repeat - not easy at all! But I did it...and I have a list of things that I need to go back and re-read and dig into on a deeper level.

Last week  had to read quite a few books, but most of them were very short. The list looks impressive - but it really isn't. I started with Daniel because I was behind. I loved the theme of obeying God even when it is tough. Boy can I relate to that...now I just have to rely on that!

Hosea made my heart beat really fast as I thought about God’s love for us. He pursues us when we are at our worst and simply refuses to give up. I cringe to think about my worst but am so thankful that he reached out his hand in his perfect timing.

The book of Joel reminded me that God is in all things – all situations, all circumstances. Nothing is unexpected to God. The sooner we realize that God is not the enemy, the better off we will be!

Amos reminds me to live for God.

We can’t forget about Obadiah – this short book in the Old Testament packs a little punch as it reminds me to check my pride!

And then we have Jonah. Dear, sweet Jonah. The dude who got swallowed by a big ole fish – what a thing to be remembered by, eh? But guess what? I too have tried to keep God at a safe distance. I think I will stay away from the ocean…

Micah repeats the message God has for us. I love 6:8 as quoted from The Message:

“But he’s already made it plain how to live, what to do, what God is looking for in men and women. It’s quite simple: Do what is fair and just to your neighbor, be compassionate and loyal in your love, and don’t take yourself too seriously – take God seriously.”

From there we move on to Nahum where God means business!

I love to try to pronounce Habakkuk. And I like his little book because he seems to go to God with all the questions I have. Well, maybe not all of them…He ends his book wonderfully with a reminder to hold on to faith - no matter what.

“Yet I will rejoice in the Lord, I will be joyful in God my Savior. The Sovereign Lord is my strength; he makes my feet like the feet of a deer, he enables me to go on the heights”
(3:18-19).

Amen!

Zephaniah steps in and tells us that we can't do a thing apart from God. I am reminded that I must continue to seek him in all things and know that he is indeed present.

The Lord your God is with you, he is mighty to save. He will take great delight in you, he will quiet you with his love, he will rejoice over you with singing”
(3:17). 

Haggai got me thinking about the place of worship. The actual building is a place that connects us to God.

Zechariah comes on the scene with some visions – a glimmer of hope of what is to come.

And we end with Malachi. I picture him taking me by the shoulders and shaking me when I am going through the motions rather than waiting in anticipation for God!

Commence Happy Dance! Though I am technically behind in my reading (I should have read most of Matthew), I am fairly confident I can make up some ground now that I am ready to plunge into the New Testament.

6 Ways to Avoid Throwing Out Leftovers

Happy belated Easter friends! I love the holidays, don’t you? Especially the ones that have such deep meaning. What a great opportunity for reflection.

Often people will gather with friends and family during the holidays. Refrigerators will be emptied. Feasts large and small will be spread on tables. Belts will be loosened. Naps will be in order! And after the food is consumed, the clean-up begins. Leftovers are put in bags and bowls. Some are sent home with guests and the rest is packed into the fridge. And then the conundrum. What to do with the leftovers?

Throwing leftovers in the garbage is not a viable option to me. Here are 6 Ways to Avoid Throwing Leftovers in the Garbage.

1. Meal plan! Find a system that works for you and plan your meals in advance (at least weekly). Reduce your impulse trips to the grocery store and save yourself some sanity and some cash!

2. Think about how many people you are feeding before you buy your ingredients. Are you cooking for your family? Having guests? Just you and your spouse? Many recipes can be adjusted accordingly. Don’t feel like you have to make a recipe that feeds 8 if you are only feeding 4.

3. If you are not comfortable adjusting recipes, divide and freeze. You can easily pull a meal from the fridge on “one of those nights” and enjoy a stress-free evening.

4. You can also share meals with friends. Divide and deliver!

5. Plan a leftover night. Designate one night as Find It and Fix It night. In my house, that night usually occurs on the weekend.

6. Plan meals that can be used twice. For instance, serve tacos on Monday and use the leftover meat for spaghetti sauce on Tuesday. Think about breakfast too. Many meats can be served as sides. Veggies can be mixed in with eggs. Be creative.

In honor of the popular Easter main dish – ham – here are some ways to reuse in the days to follow. Avoid throwing out those leftovers!

You can use some ham in your eggs for a tasty start to the morning.

The Treasure of Mundane

In my Bible notes it says, "spinning thread was women's work." My arms are crossed and I am pouting. Women's work - how unfair! Good thing that was way before this girl's time...since I can't sew and all! As I sit here and ponder "women's work" I realize this idea still exists. My husband is very good at helping when needed, but for the most part, I am responsible for cooking, cleaning, and laundry. That's not always good...

I love to entertain so I will work hard to make my home inviting and prepare a delicious meal on a specific day or for a particular occasion. But to pick up before Mike gets home, make sure dinner is hot and ready at just the right time, and to ensure everyone has clean clothes {every single day}...well, let's just say I need a little work. I get distracted. I get lazy. I find other, more important things to do.  

That Proverbs 31 Woman has got me this time. Sometimes I think she purposefully finds things to make me look bad. Here she is spinning her own thread - surely to be used on the clothes she will make and mend. Although I want to learn how to sew, I don't think I will take up making clothes for my family let alone spinning my own thread. But I will think a little differently about my work. The things I can do to make my house a home - for my family and my friends. I can work a little harder to make sure the house is picked up before Mike gets home from a long day at work. The whole house too...not just the parts he will see right away. Those bedrooms always get me! I could probably plan my day so dinner is timed a little better. And I can set some goals to keep up on the never-ending laundry.

I'm sure it wasn't fun for the Proverbs 31 Woman to spin her own thread knowing that she would have to put in even more time using it to make something worthy to wear. {the pressure}. I have realized that these tasks that I have before me are not always fun or easy, but it is the work God has for me at this time in my life as I care for my family. I wouldn't be serving him well if I ignored the tasks at hand. I love what Courtney says in her eBook:

"...do not grow weary in your mundane tasks. Mundane tasks are the hidden treasure to creating a home that is a haven. Embrace this hidden treasure as the Proverbs 31 woman did."

Lesson learned! What mundane task do you need to embrace in order to reveal a hidden treasure?

Morning Granola

There is not much that will make me say "Good Morning," but this fabulous granola comes close. I love it on my yogurt or in my oatmeal for that special crunch!


What you'll need:
4 cups old fashioned oats
1/2 cup toasted wheat germ
1/2 cup sliced almonds
2 teaspoons of cinnamon
1/8 teaspoon salt
1/2 cup orange juice
1/2 cup honey or real maple syrup
2 teaspoons oil
1 teaspoon vanilla
1 cup dried cranberries

In a large bowl, combine the oats, wheat germ, almonds, cinnamon, and salt. Set aside. In a small sauce pan, combine the OJ, honey or syrup, and oil. Bring to a boil, stirring constantly. Remove from heat and stir in vanilla. Pour over the dry mixture and mix well.

Transfer this mixture to a baking pan coated with cooking spray. Bake at 350 for 20-25 minutes, until brown. Be sure to stir often!

When completely cooled, add dried fruit.

A Ball of Energy


I don't know about you, but sometimes I need a little pick-me-up in the middle of the day. These energy balls did the trick. They were simple to make and yummy to eat! My husband even liked them. With as many as he ate, he should have been like the Energizer Bunny!

Peanut Butter Chocolate Chip Bars

What is better than peanut butter and chocolate? Nothing. The answer is nothing. This recipe is a light and fluffy piece of heaven combining two of the best things on the face of this planet.


What you'll need:
3/4 cup flour
3/4 teaspoon baking soda
a pinch of salt
1 cup peanut butter
1/3 cup sugar
1 egg, beaten
1/2 cup milk
1 teaspoon vanilla
1 cup chocolate chips

Preheat the oven to 350. Combine the peanut butter, sugar, and egg until creamy. Add the milk and vanilla. Stir in the flour, baking soda, and salt. Mix in the chips. Place the mixture in a baking dish and pat the top down to smooth it out a little. Bake for 15 minutes, or until slightly puffy and very lightly browned.

DIY Marinated Tenderloins

I'm not a big fan of paying someone else to do what I can do myself - unless it is something I don't like to do...cleaning, washing windows, and painting come to mind. Because we love to grill in the summer, we are creative with marinades. Who wants to eat a piece of plain, boring beef, pork, or chicken? Not me! But I don't want to pay the high meat market prices for marinated anything. I surprised Mike with this steak marinade the other day. This would be good on any beef, but we used deer loins...hence the surprise. I'm also not a big fan of deer meat, and I usually reserve that for Mike to do his own thing while I am away. 


What you'll need:
Beef or deer tenderloins
Bacon
1/4 cup water
1/4 cup apple cider vinegar
1/8 cup soy sauce
1 tablespoon sugar
1/2 teaspoon ground ginger
Minced garlic to taste
Diced onion to taste

Combine all of the ingredients (except meat and bacon of course). Pour the mixture over the meat and marinade all day. Try to shake 'er up a few times throughout the day if you are able. Before cooking, wrap them up with bacon and secure with a toothpick. Grill to taste and enjoy!

Baked Sweet Potatoes


Many people think that sweet potatoes are hard to make. Actually, they are quite simple. One way I enjoy them is baked. I coat the outside with a little oil, poke holes in them, and bake in the oven at 400 for about 45 minutes. It doesn't get any easier than that!

I am notorious for taking something healthy and making it unhealthy. For a special treat, just add butter and brown sugar! Mmmm....

Chocolate Cherry Goodness


What do you think is underneath this pile of cherries? No guesses? I know you are dying to find out...Ho-Ho's! If you need a stupidly simple dessert in a hurry - I'm talking 2 minutes here friends - try this!

Place ho-ho's on the bottom of a baking dish. I used 2 boxes. Dump cherry pie filling on top (2 cans). When you are ready to serve, spread a tub of Cool Whip on top and watch the crowd go wild!

Weight Watchers Cake

Well...if I have to (and trust me, I have to), I will make and eat a WW cake. Lucky for me, it doesn't taste like a diet cake. This is moist, delicious, and guilt free!


What you'll need:
Any cake mix
Can of soda
Light Cool Whip
Topping of your choice

I used a strawberry cake with a can of Sprite and, of course, strawberries on top! The combination possibilities are endless so experiment and enjoy!

Mix the cake mix with the soda. No other ingredients are needed. Bake according to the package directions. When cool, top with cool whip and chill. Yum!

Invites by Me...Well, not me - Staci!

It has finally hit me! I knew it...but I have been avoiding it. I suppose I should face reality at some point so I'm not a blubbering idiot on graduation day. In seven short weeks, Ryan will receive his diploma and we will be hosting a graduation party for him...on the same day. Talk about an emotional roller coaster!

What was I thinking? Oh yea...I was thinking that this was the only weekend available because of his baseball schedule.

Overcoming Obstacles and Impacting Hearts

What a weekend – Easter weekend! My church was buzzing with activity as swarms of volunteers helped with decorations, worship, an egg hunt, cleaning, and so much more. A lot of time and effort gets put into this weekend – and Satan didn’t like it.

For me, in my little corner of the church, the preparations began on Friday. Yes, I am a bit of a procrastinator, but in my defense (this time), I was out of town. I knew what I had to do – I just couldn’t get it done until I returned.

Before I left my house on Friday, I made a list of all the things I needed to accomplish and purchase. I ran to the store and then to the church for operation clean and prepare. In the midst of my self-created hoopla, I realized that I forgot a few items. That meant another trip to the store. Believe it or not, that is pretty normal for me – even with a list!

Saturday morning I began making my jello beans for the preschool kids. Eight colors plus one mold makes a long day. It wasn’t hard, just sort of boring. Lucky for me I could break up the monotony with another trip to the store because I misread the giggler recipe and needed more boxes of jello. I made three colors before breaking for some baseball…and then some ice cream just because.

Saturday evening met me back in the kitchen to finish off the rest of the colors. But guess what? I needed to add blue food coloring to the black cherry jello in order to make it turn black. I opened my cupboard to find red, yellow, and green food coloring…but no blue. Trip number 4 to the store. *sigh*

Satan wasn’t going to dampen my mood or ruin my attitude. While the rest of my family was taking a nap, I snuck out, had a few minutes of quiet time, and found a some extra deals on things I needed for the week.

I finished up with the jello beans and started to pack what I could for the next morning. Knowing I am not a morning person, I should have made a list of the refrigerated things I needed. But I didn’t. Luckily my hubby was attending the first service and could bail me out. I couldn’t serve fruit smoothies to my volunteers without the fruit and the jello bean prayer isn’t quite complete without the white jello beans!


Now the good stuff…the meat and bones to a Sunday Morning in Sparks. The curriculum was ready. Fun activities were planned. And the anticipation of it all gave me chills. I couldn’t wait to see everything come together. We were beyond prepared to serve the kids. In fact, I had extra volunteers show up. Extra!! Have I mentioned before how incredible my team is? INCREDIBLE! They were prepared. They were focused. They were on top of their game. They were willing to serve. To put their own families on hold for one more hour…or two, so that our kids could have an amazing experience. Have you ever watched someone tell the Easter story to preschoolers? It leaves you breathless. Have you ever witnessed a team working together to ensure smooth transitions - especially with toddlers? It will rock your world. Have you ever been a part of a ministry that works so hard to achieve excellence week after week? It will fill you with joy.



Joy is all that I had today. I was energized and honored to serve alongside my team once again and I give God all the glory. He orchestrated every moment. Every smile. Every hug. Every word. And he knows what happened in every heart. Every. Heart.

Satan wasn’t going to win today. No obstacle was going to stand in the way of God moving. Kids were going to hear the story – an important story. It’s okay that I had to make four trips to the store. It’s okay that it took a long time to make jello beans. It’s okay that I forgot things at home and it's even okay that I almost ran out of smoothie ingredients. It’s okay because little hearts were impacted today.

Go God!!

Ham Tetrazzini

Oo, la, la...this is the perfect, reduced fat, flavor packed supper! At a mere 290 calories per serving, you won't feel guily as you sit down to eat. Pair this meal up with a nice salad and you will be a hero.

What you need:
1 can reduced sodium cream of mushroom soup
1 cup sliced mushrooms
1 cup cubed ham
1/2 cup fat-free evaporated milk
2 tablespoons water
7 ounces spaghetti
1/2 cup parmesan cheese

In a slow cooker, combine the soup, mushrooms, ham, milk, and water. Cover and cook on low for 4 hours. Cook the spaghettei and drain. Add to the sauce in the slow cooker along with the parmesan cheese and toss to coat.

He Gave

I wish I had something profound to say to you about Easter weekend…but I don’t. I wish that I could tell you that I get it. That I understand fully what Jesus went through and why…but I can’t. I wish I could tell you that this weekend is the simple answer…but I won’t.

I will tell you that the story begins with a baby born in a stable, surrounded by stinky animals. His family travelled to escape harm. People were intrigued by him as he grew up. He taught and healed and called. He blessed and loved. He calmed storms and people. He nourished body and soul. He listened. He cared. He warned. He prayed. He gave.

He gave.

He gave his life.

He was betrayed. Imagine your best friend turning on you.

He was arrested. Imagine the cuffs being placed on your wrists.

He was tried. Imagine handing over your life.

He was beaten. Imagine the pain.

He was mocked. Imagine being laughed at.

He was murdered. Imagine being alone.

He gave his life.

Willingly, he withstood humiliation. Was embarrassed. Endured great pain. Allowed the very people he taught and healed and loved to decide his fate. But the story doesn’t end there. Because he gave – we live.

This evening, I attended an incredible Good Friday service at my church and was reminded that Jesus was humiliated for me. I look at the words above and tears roll down my cheeks because sometimes…

…sometimes I don’t give like he gave. Lord, forgive me. And grant me the courage to bear that cross. The story isn't simple at all. What he went through is hard to fathom. His love - just plain incredible and simply matchless. All he asks is for us to live.

Live like him.

                Bold.

                         Willing.

                                     Humble.

                                                                           So others can have life.

Stretch

As if Isaiah and Jeremiah weren’t enough to stretch my comprehension skills, I did my best to keep on reading for the B90 Challenge. As you might remember from this post, I was hanging out in NY for a few days…which means I am a little behind on my B90 reading. Not a lot, but behind none-the-less. It doesn’t help at all that I had to read Lamentations, Ezekiel, and Daniel! Okay Daniel is not a tough book, in comparison to the four preceding it, and in fact, the "easy" book is the one I have not started to read.

*sigh*

Would it be wrong of me to tell you that I was encouraged to see that Lamentations only had five books? Yea…just being real and that was really my thought after reading the first chapter. I did glean one small thing - the importance of holding steadfast to faith in the most difficult times of life. I always love reading about the faithfulness of God.

“God’s loyal love couldn’t have run out, his merciful love couldn’t have dried up”
(3:22).

“When life is heavy and hard to take, go off by yourself. Enter the silence. Bow in prayer. Don’t ask questions: Wait for hope to appear. Don’t run from trouble. Take it full-face. The ‘worst’ is never the worst”
(3:28-30).

“Because the Master won’t ever walk out and fail to return”
(3:31).

Holla…cuz that’s all I got (which might actually be the reason to holla...and shake me a few times!).

I'll quit stalling and move on to the crazy book of Ezekiel. This is a book very similar to Revelations, which happens to be yet another book I don’t get! I am working on a post of the Top Ten Weird Things in the Bible and I am pretty sure something from Ezekiel will appear on this list. 

But I digress. I'm not sure what I would do if I were in Zeke's sandals. Can I call him Zeke?

He gets the {fun} job of being God’s messenger. To rebellious people. I’m thinking that is one job I wouldn't apply for. Wait. Zeke didn’t apply for it either. His imagery is exquisite. His details are meticulous. But there is a communication gap between us. I need the help of my wise pastors in understanding this one...and I can picture them doing rock-paper-scissors to see who gets stuck with the monumental task of helping me {laughing out loud}! 

These are two books I will probably have to read a few more times to really understand. Until that time, I will be grateful for getting through them unscathed, other than a minor headache but we’ll blame that on Pepsi withdrawal. It really is a life-changing experience to be in his word at a constant pace, soaking in nuggets of truth, and being wrapped in his love. There is nothing I enjoy more than my time with God, perusing the pages of his story, and allowing him to write mine.

Money, money, money, money...

What would you do with a ton of money? Like more money than you could ever imagine? Specifically, $213 million smackers? I know what I would do. My husband and I have had some fun thinking about how we could really make an impact on the world if we had money. Our plans include paying off the church mortgage, helping our financially struggling school, and paying off debt for our families. There might be a new Harley and a reliable car in our plan too…Oh, and answers to prayer for being able to pay for Ryan's college education. How could I forget that?

Three lucky recent lottery winners are expected to receive $213 million dollars. Wowzas! That is a lot of cash! Sadly, statistics show that most lottery winners actually run out of money. I still can’t wrap my brain around the idea of running out of $213 million dollars, but apparently it happens. I suppose it is all about greed.

Like the woman who says she has the winning ticket but won’t produce it because she doesn’t want to share with her co-workers.

I've read stories about past lottery winners. They are on this big high and not really thinking rationally about their choices. Many go out and buy stuff – bigger houses (okay, mansions...and people to clean them), fancy cars, and of course, the latest and greatest gadgets. Some open businesses. Some give money away generously. Big weddings and dream vacations take place. But that happiness is temporal...and temporary. Suddenly these people find themselves in debt, filing for bankruptcy, in jail, divorced, flat broke, and incredibly unhappy.

Crazy, I say…crazy! But true…I think I will count my blessings and be happy in just-above-the-poverty-line America.

I am actually thankful I don't have a lot of money, because money doesn't make you happy - a reality many past lottery winners found out the hard way. What makes me happy is being surrounded by family and friends who love me for who I am and not what I have. It makes me happy to know that I am using the gifts that God has specifically chosen for me to make an impact on the world and build the kingdom - the ultimate mansion. I am happy as I close my eyes at night knowing that I worked hard to pour into the spiritual life of my kids. I am happy to be on my knees in prayer for others. Oh yes, I am blessed beyond measure - even without the green stuff.

I doubt I will ever win the lottery, mostly because I don’t play, but if I ever suddenly find myself in financial gain, well – I pray that God would lead me to a great financial planner who will help me to realize my dreams of helping people and not myself.

Ten Meal Ideas

This week I am hanging out with my daddy in New York. Even though this is not my childhood home, I still have lots of memories...all the way back to standing in the driveway of this house many years ago, with my brother praying for wisdom and guidance with the decision for my mom and dad to move. My mom loved this house and was thrilled on move-in day.

Mom was the Jack-of-all-trades and worked hard to make this house a home. She was an incredible decorator - forever painting and rearranging furniture. I get that from her...well, not so much the painting part. She loved to “dumpster dive” and turn what you and I would call junk into her treasures. She sewed her own curtains and made her own cute decorations. Does it count that I want to be able to do that...someday? Mom also dabbled in photography and even framed some of her best work to add to the beauty on her walls.


She opened a Bed & Breakfast and entertained people who would become great friends. I get that from her too...the love of entertaining. But cooking is what she loved the most and this is where she was really “in the zone.” From the kitchen to the dining room table, she worked hard to create the perfect dining experience.





When I would come to visit, mom would always make sure she served up all my favorites…and I went home a little heavier than I came! I would love to say that I enjoy cooking as much as my mom, but I'm not quite in the same zone. But I can dream! Today I spent some time going through cookbooks – there are a lot of them!


I just peeked in a few. There are even more than on these shelves! I personally like church cookbooks because they have all sorts of easy recipes!


I also like healthy cookbooks for new ideas to help me reach my weight loss goals and keep my family somewhat healthy.


And of course, there are those cookbooks with pictures that I adore!


From these favorite books, I have compiled a list of the Top Ten Recipe Ideas I can't wait to try out on my family. 

1. Honey Banana Whole Wheat Bread – Sweet and healthy!

2. Country Chicken and Biscuits – I love good old fashioned country cooking and this recipe fits the bill.

3. Chicken Macaroni Casserole – This is an overnight casserole that I simply can’t wait to try. There is a ham version as well. Score!

4. Lasagna Casserole – I am always looking for new ways to do pasta!

5. Layered Meatloaf – This recipe takes your ordinary meatloaf and puts a surprise in the middle!

6. Lemon Pork Chops – A flavorful way to cook up the other white meat.

7. The Next Best Thing to Robert Redford Cake – An easy and delicious cake that I remember my mom making. I think I will need to change the name though!

8. Sweet Potato Casserole – I love to eat this but have never attempted to make it myself. This recipe is easy peasy!

9. Tuna Chow Mein Casserole – I like tuna casserole more than anyone in my family, but I only have a couple of recipes in my bank. I was intrigued by this one which combines two of my favs – tuna and chow mein noodles!

10. Punch – I scored a few different punch recipes to serve my small group. Now I just need a punch bowl…

From Blah to Awe


From Blah to Awe.

Doesn’t that title intrigue you? It drew me in immediately and I knew this was a book I needed to read. I mean, really, who doesn’t have a lull in their faith? A period when you just go through the motions? A time when you don’t feel very loved? A stage of life where you are bored?

I have – even in adulthood. You see, God desires for us to pursue him with reckless abandon - and sometimes that is hard work. We have to think. We have to go to the distance to understand our story within his. We have to take God out of the cute little box we hold him in if we want to experience him.

And that is exactly why I was drawn to this book. Jenna Lucado Bishop does a great job at reaching girls at an impressionable age and capturing their attention. She engages them in their story, plucks them from the grip of a lifeless faith, and guides them to explore the radical life God has for them.

This is a must read for any young teenage girl caught up in the blahs of faith, with the desire to explore…and experience more. What a great opportunity we, as women of faith, have to mentor the next generation!

C-H-A-I-R-S

Chapter eight of The Love and Respect Experience follows up COUPLE with CHAIRS. This time, the message is for the ladies.

“And the wife must respect her husband.”
~ Ephesians 5:33

We hear the word respect thrown out all the time. Respect your elders. Respect your teachers. Respect your parents. Respect your husband. But what exactly does that mean? My group had a good discussion about this last week. Dr. Eggerichs uses the CHAIR acronym, but we found that respect can mean so much more.

CConquest. You are seeking to recognize and thank him for his desire to work and achieve for his family (Genesis 2:!5).

HHierarchy. You are trying to thank him for his desire to be responsible in protecting and providing (Ephesians 5:23).

AAuthority. You are trying to pull back from subverting his leadership, albeit innocently, and are seeking ways to acknowledge his desire to lead and serve (Ephesians 5:22).

IInsight. You are endeavoring to appreciate his desire to analyze and counsel by listening to the ideas and advice he offers (1 Timothy 2:14).

RRelationship. You are valuing his desire for you to be his friend and stand shoulder to shoulder with him (Titus 2:4; Song of Solomon 5:1).

SSexuality. You are seeking to respond to him, appreciating his desire for sexual intimacy that only you can meet (Proverbs 5:19; 1 Corinthians 7:5).

No matter how you slice it, respect is essential in a relationship. But how you show respect to your husband may manifest itself in different ways.

Now that we have love and respect under our belts, chapter nine is ready to ruffle our feathers with a reminder that we mess up – a lot (at least I do). And when we mess up, it causes our spouse to retaliate. It’s called being human. When you are hurt, you tend to throw up walls and guard yourself – and sometimes that guarding leads to actions that won’t turn out to be your best attributes. Remembering the love and respect principle will be crucial in times like these.

Oh, and forgiveness. That helps too!

Meal Planning

One of my goals this year was to master meal planning. I’m still not perfect, but I work really hard to make sure there are yummy meals waiting for my family to devour. We don’t always get to eat together anymore, but as many days as possible, I try to gather my guys around the table. It is the perfect time for us to talk…and often the only time we are all together for any length of time. {sad}


There are a lot of things that go into planning weekly meals for my busy family. Before I even begin, I write out our schedule for the week. These little 5x7 frames are typically filled with busyness – especially now that baseball is in full swing.

Once I have a schedule, I decide what kind of meal I should make – casserole, grill, crockpot…And then I plan what goes where on the weekly menu. Easy peasy! Here are a few of the meals found on my recent menus.

This savory Beef & Rice dish  is the perfect meal to make at the end of a busy day. It doesn’t take too much time and has great flavor from the onions and peppers.
